Tomato soup recipe – fast & easy!

Too Good to resist.


1 Tablespoon Butter

1 Small onion (cut small or large as you prefer)

4 Large Beefsteak Tomatoes (chopped)

Cilantro, Celery, Green Onions (chopped)

Salt, Black Pepper

Water and/or Vegetable Stock

Chives


1) Use a heavy pot which does not stick. Over medium heat, place butter, onions, cilantro, celery, green onions – sauté, turning slightly for about 2 to 3 minutes

2) Add chopped tomatoes and sauté for 2 minutes approx.

3) Add water (6 cups or to your preference) & bring to a boil

4) Add salt & black pepper to your liking/taste, cover and simmer on low heat for about 30 minutes

5) Remove from heat and sprinkle with chopped chives


Mmmm, your simple, nutritious Tomato Soup is ready to be served!
